Nu-uh. Shiek is Zelda alter ego. It still the same person she just uses magic to change her cloths, eyes, and skin color. It's still Zelda just with a new look.
And in SSBM Shiek is refered to as a she.

"Alter-ego" does not confirm that she did not change her gender. It just means a different identity. Exactly how much she changed is ambiguous.
Since she used magic to do it, she would have no reason to change everything about herself other than her gender, since that would make her disguise quite weak. You can believe that she did not change her gender if you like, but you certainly can't demonstrate that she didn't. Ergo, since common sense suggests that she did - and since Sheik's body is clearly illustrated as male - your opinion carries no more weight than the opposing viewpoint, to say the least.
SSBM is not part of TLoZ canon, and in addition, Sheik's design was altered in SSBM.
I say again: you can believe what you want to believe. Why are you bothering to argue it here, when you can prove nothing? Just be content with your opinion and don't try to force it on others.

You forgot to mention that when they refer to Sheik as a she that their really referring to the fact that Sheik is Zelda. More simply put, their talking about his core/original gender. Also, I think you should make a pic making fun of the fact that Sheik the male form of Zelda.
I've been meaning to do a parody pic where I'd take that one official drawing of Sheik from Ocarina, trace around his body shape, and then use those proportions to draw "Zelda". It would be hilarious XD
